How did we get here?
Founded in 2020 by childhood friends Jack Lark and Louis Duckett, our distillery set out to bring a modern Australian approach to a traditional European drink. Starting with a shared passion for spirits and a respect for traditional recipes, we developed an absinthe that combines the classic, bold taste of anise with a hint of native Australian lemon myrtle. This unique blend keeps the spirit’s heritage alive while introducing a distinctly local flavor.
Our process is straightforward and authentic - based off an historical French recipe. We macerate aniseed, wormwood, fennel seed, and lemon myrtle in grape spirit for 48 hours, distilling the mix in a copper pot still to create a clean, balanced absinthe. To complete the process, we do a second maceration with natural ingredients, giving our absinthe its signature light green hue—no artificial coloring required.
Our absinthe is crafted to be versatile: great on its own, mixed in cocktails, or served in the traditional drip style.
