Isn't Absinthe illegal in Australia?

It was until the year 2000. Luckily enough for us, we are able to make it now!

How should I drink it?

Absinthe is traditionally drunk by letting ice-cold water slowly drip over a sugar cube on to a slotted spoon into the glass, releasing those complex herbal aromas and diluting the potent spirit to perfection. In process the spirit goes cloudy by releasing those delicious oils, creating a phenomenon called a "louche".

We like to think it can be drunk however you like - on its own, in a cocktail or in a delicious sprits. Even simply, it is divine with a bit of soda water in the summer.

How is it made?

Similarly to how you make a gin. You distil your botanicals in a copper pot still with a neutral spirit that's essentially a vodka (we use grape spirit).

Afterwards you macerate the distilled absinthe in green botanicals such as lemon myrtle and hyssop to give it a green tinge.

The process is kind of like dunking a big tea bag into a vat of delicious absinthe.

Where do you make it?

Our distillery is based in Tasmania, about a 15 minute drive north of Hobart.

We don't have a visitors centre yet, but are happy to come and visit local bars to tell you some more about our product.

Right now the easiest way is to grab a bottle online. We’re rolling it out to bars and bottle shops around Australia, so you’ll start spotting the Green Devil out in the wild soon.
