Absinthe Highball

Bright, refreshing and lightly herbal with a lift of citrus.

Ingredients:

. 30ml Local Absinthe 60%

. 15ml lemon myrtle syrup or simple syrup

. Soda Water

. Slice of Lemon


Method:

  1. Fill a tall glass with ice.
  2. Add the absinthe and syrup, then stir gently.
  3. Top with soda water.
  4. Garnish with a slice of lemon.
