Classic Louche

The traditional absinthe ritual - herbal, aromatic and every absinthe is supposed to be.

Ingredients:

. 30ml Local Absinthe 60%

. 1 Sugar cube

. 110ml ice cold water

. Absinthe spoon

Method:

  1. Chill the water by stirring it with ice in a small jug.
  2. Pour the absinthe into a glass.
  3. Rest an absinthe spoon with the sugar cube on top of the glass.
  4. Slowly pour the cold water over the sugar cube and into the absinthe.
  5. As the water mixes in, the absinthe will turn cloudy (the louche).
  6. Stir with the spoon to dissolve any remaining sugar.

    * If you don’t have a sugar cube, you can use 8ml of simple syrup or 1tsp of sugar.
