Classic Louche
The traditional absinthe ritual - herbal, aromatic and every absinthe is supposed to be.

Ingredients:
. 30ml Local Absinthe 60%
. 1 Sugar cube
. 110ml ice cold water
. Absinthe spoon
Method:
- Chill the water by stirring it with ice in a small jug.
- Pour the absinthe into a glass.
- Rest an absinthe spoon with the sugar cube on top of the glass.
- Slowly pour the cold water over the sugar cube and into the absinthe.
- As the water mixes in, the absinthe will turn cloudy (the louche).
- Stir with the spoon to dissolve any remaining sugar.
* If you don’t have a sugar cube, you can use 8ml of simple syrup or 1tsp of sugar.
